I am crazy about cilantro! I love everything about cilantro and can eat it with any and everything. So, I decided to spice my cilantro up...actually I decided to spice my baby spinach up with cilantro for an early afternoon snack. In a small skillet, I threw in a tablespoon of olive oil and 2 tablespoons of garlic. I sauteed the garlic on medium heat. Once the garlic and oil start to sizzle, add in 3 handfuls of baby spinach. Spinach shrinks tremendously so 3 handfuls was enough for 1 serving. Heat spinach on low heat for 5-10 minutes or until the spinach reaches your desired texture. I added a splash of fresh lemon juice to enhance the flavor. Now let's talk WINE..I paired the Sycamore Lane Chardonnay from Napa, California with my spinach/cilantro mix. Sycamore Lane is full-bodied with a rich, round texture. Its fullness is balanced with fresh, citrus flavors and crsip acidity. Sycamore Lane Chardonnay was a perfect pairing for my garlic spinach and cilantro.
